How to use the Blade

For the best use of the blade it is required a steady cleaning and a frequent check of its sharpening, that can be done up to a reduction of about 12 mm of its nominal outslde diameter, as new (ref EN 1974:1998). Personnel assigned to this operation must be trained properly.
You are requested to follow the slicing machine “Use and maintenance manual” for the operating details and the safety requirements.

Cleaning

- Disconnect the slicing machine from the socket, close the thickness plate, remove the blade cover and the slice deflector and disassembly or tilt the food carriage.
- Clean both the blade sides with a soft cloth, soaked in denatured alcohol.
- Verify the chromium plating integrity and the absence of rusted areas.

Sharpening

- Degrease the blade with a soft cloth, soaked in denatured alcohol.
- Put the built-in sharpener in its working position, or install the sharpener supplied with the machine.
- Sharpen the blade for 10 to 15 seconds.
Sharpener with one button or lever only
Verify that the blade is sharpened right.
Sharpener with two buttons or levers
After having done the first operation (sharpening), stop the blade and, with a pencil, be sure to have a slight burr on its edge.
Then go on with the second step (deburring) for about 5 seconds.
Attention: do not extend the deburring operation over the suggested time, to avoid the distortion of the blade edge.
- Brush the wheels with denatured alcohol.
- Reposition or put the shapener away.
- Before using again the machine remove the sharpening chips with brush and a soft cloth.

Replacement

- Blade replacement must be done by trained personnel only, equipped with suitable accident prevention means and in accordace with the procedure established by the machine manufacturer.
- Blade is delivered already sharpened; however it would be better to sharpen it again after its installation, to fit the machine geometry.
- Blade material is steel and so can be disposed. Remove the cutting edge before disposal.

   

Material

Hot rolled steel. Quality 100Cr6, mat. N° 1.2067, pickling, annealing and spheroidal cemented, and final annealing. Tollerances DIN EN 10048/96.

1 Symmetric longitudinal section in cutting edge zone and chrome state.

2 Total depth of hardening coat o ca. 10mm.

3 Structure: globular pearlite at 100%.

   

One safety and purpose packing

SAFETY
Handy manegeable and solid, thanks to side reinforced edge, the new packing C.C. LAME can guarantee a suitable safety security, respecting the transport rules and the displacement: one zincked bolt, personalized for each blade centre, fix blade to a wooden support, placed in the bottom of packing, useful also to reinforce and protect against impacts.

PRACTICALNESS
A simply and essential design is matching to a pratical solution purposely studied to made easier the possibility to put one top over the other the packing, till a maximal of 20. An help of extreme utility and functionality in terms of economy and space.
